Fried Calamari with Chipotle Aioli

Ingredients

1 lb Oyster Bay Squid
1 1/2 cup all-purpose flour
3 tablespoon
1 chipotle chilies in adobo sauce
1 cloves garlic, minced
2 tbsp sweet chili sauce
3 tbsp fresh lime juice
3 tbsp mayonnaise
Vegetable oil for Frying

Preparation

Calamari: Cut thawed squid tubes into ¼ inch strips and place into a medium bowl. Preheat fryer or pot with oil to 350°F . In a separate bowl, mix flower with Old Bay seasoning and set aside. Mix squid tubes and tentacles and coat pieces in seasoned flour. Place squid in fryer with oil and cook for able 7 minutes or until golden brown. Remove excess oil by placing squid on a towel when fully cooked.

Chipotle Aioli: Mix chipotle chilies, garlic, sweet chili sauce, and lime juice in blender. Blend well, making sure all ingredients are pureed. Pour mixture into a bowl, fold in mayonnaise, and reserve in refrigerator. When ready to serve, place sauce in a dipping bowl with calamari on a platter and garnish with lemon wedges. (serves 3-5)
