Seafood Salad Stuffed Avocado
1 lb Oyster Bay shredded imitation crabmeat
1 Scallion minced
1/2 cup mayonnaise
1/2 teaspoon paprika
Salt & Pepper to taste
1 Avocado halved
In a large bowl mix combine all Seafood Salad ingredients and gently stir until all ingredients are evenly coated. Let mixture settle and cool in the refrigerator for at least one hour.
Once salad mixture is chilled, remove from refrigerator and set aside. Cut avocado in half, remove the pit and skin. Scoop desired amount of seafood salad into the hollow space left by the pit (we recommend about 4 tablespoons). Dress stuffed avocado with ginger and Sriracha to taste & enjoy!
