Cioppino Seafood Stew

Ingredients

  • 1 lb Oyster Bay cod portions
  • ½ lb Oyster Bay Shrimp, peeled & deveined
  • ½ lb Scallops
  • ½ lb Oyster Bay Mussels or Clams, cleaned
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • ½ tsp red pepper flakes
  • 1 cup dry white wine
  • 1 can crushed tomatoes
  • 2 cups seafood stock
  • 1 bay leaf
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • Salt & black pepper
  • Fresh parsley, chopped (garnish)

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add onion, celery, fennel & garlic; cook until softened.
  • Stir in red pepper flakes, oregano & basil.
  • Pour in wine; simmer 2–3 min to reduce slightly.
  • Add tomatoes, seafood stock, bay leaf, salt & pepper; simmer 20 min.
  • Add seafood; cover and simmer 6–8 min until seafood is cooked and shells open.
  • Remove bay leaf; adjust seasoning.
  • Garnish with parsley and serve hot with bread.
