Cioppino Seafood Stew
Ingredients
- 1 lb Oyster Bay cod portions
- ½ lb Oyster Bay Shrimp, peeled & deveined
- ½ lb Scallops
- ½ lb Oyster Bay Mussels or Clams, cleaned
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- ½ tsp red pepper flakes
- 1 cup dry white wine
- 1 can crushed tomatoes
- 2 cups seafood stock
- 1 bay leaf
- 1 tsp dried oregano
- ½ tsp dried basil
- Salt & black pepper
- Fresh parsley, chopped (garnish)
Preparation
- Heat olive oil in a large pot over medium heat.
- Add onion, celery, fennel & garlic; cook until softened.
- Stir in red pepper flakes, oregano & basil.
- Pour in wine; simmer 2–3 min to reduce slightly.
- Add tomatoes, seafood stock, bay leaf, salt & pepper; simmer 20 min.
- Add seafood; cover and simmer 6–8 min until seafood is cooked and shells open.
- Remove bay leaf; adjust seasoning.
- Garnish with parsley and serve hot with bread.
