Mediterranean-Style Baked Grouper
Ingredients
- 1½ lb Oyster Bay Grouper Fillet
- 6–8 oz cherry tomatoes, sliced in half
- 4 garlic cloves, finely minced
- 1 tsp sweet paprika
- 1 large lemon, plus extra wedges for serving
- Extra-virgin olive oil
- 1 tbsp dried oregano
- Kosher salt, to taste
- Fresh dill, roughly chopped
- ½ tsp black pepper
- 1 to 1½ tsp ground cumin
Preparation
- Preheat the oven to 400°F and lightly coat a baking dish with olive oil.
- Pat the grouper dry with paper towels. Season both sides with kosher salt. In a small bowl, stir together the oregano, cumin, paprika, and black pepper, then evenly coat the fish with the seasoning blend.
- Arrange the seasoned fillets in the prepared baking dish. Sprinkle the minced garlic over the fish, then squeeze the lemon juice on top. Finish with a generous drizzle of olive oil.
- Scatter the halved tomatoes over the fillets.
- Bake for 12–15 minutes, or until the fish is opaque throughout and flakes easily when tested with a fork.
- Remove from the oven and garnish with fresh dill.
